Following a tradition passed down from generation to generation, based on centuries-old recipes handed down from parents to children, sausages, cheeses and hams are produced in La Alpujarra using traditional methods. Completely natural, the result of a slow and prolonged natural curing process thanks to ideal natural conditions ─cold winters, dry climate and mild summers─ gives the products an optimal cure, resulting in an exquisite and incomparable flavour.

You can find a wide variety of pork cured meats: chorizo de cantimpalo, fresh tied chorizo (mild and spicy), lomo embuchado (cured pork loin), longaniza (type of elongated sausage originating in Spain), homemade onion black pudding, salchichón (spicy sausage), sobrasada (is a raw, cured sausage from the Balearic Islands), butifarra (is a type of sausage from Catalan cuisine), and traditionally cured and salted bacon.
The geographical location, climate and curing process of the hams have long associated La Alpujarra with quality, and this has been recognised throughout history. In 2017, the ‘Jamón de la Alpujarra’ Guarantee Mark was created.

La Alpujarra cheese is another product that is highly prized by consumers, whether it is made from sheep’s, goat’s or cow’s milk, or a mixture of these cheeses from different milks in different varieties, such as paprika, rosemary, thyme, fennel, red wine, olive oil, soft, semi-cured… Its high quality has been recognised with international awards.
